- Cool the Milk – Remove from heat and let it cool to about 43°C (110°F). This ensures the live cultures don’t die when added.
- Add the Starter – Mix the 2 tablespoons of yogurt with a bit of the warm milk, then stir it back into the saucepan.
- Incubate – Pour the mixture into a clean container, cover, and keep it in a warm place for 6–12 hours (wrapped in a towel or placed in an oven with the light on). The longer it sits, the tangier it becomes.
- Refrigerate – Once set, refrigerate for at least 4 hours before serving.
